Complete Mix cookies with banana & peanut butter

What you’ll need
1 banana peeled
1 cup oat flour
2/3rd cup Complete Mix
1/3 cup lukewarm water
½ cup dried parsley
3 tablespoons peanut butter
1 egg beaten

How to prepare
Use 1/3cup of lukewarm water to soak 2/3rds cup of Complete Mix.  Set the mixture aside for around 30minutes. Preheat your oven to 180C fan forced
Place banana in a large mixing bowl and mash using a spoon, folk or potato masher.  Make sure you mash it really well.

Add the oat flour, soaked Complete Mix, parsley, peanut butter and egg.

Stir the ingredient well to combine then set aside to rest for around 5-8minutes.

Roll mixture into 24 balls, using about 1 tablespoon dough for each; transfer to a large paper-lined baking tray.
Using the back of a spoon or the heel of your hand to press each ball into a 3cm discs.
Place in the oven for 40 – 45mins until until firm and deep golden brown on the bottom.
Set aside to let cool completely.

It’s best to store these in an airtight container in the refrigerator. Alternatively, freeze and give to your pal later; just be sure to thaw the treats before handing them out.
